Case Study: The Influence of School Food Programs on High School Adolescents' Behavior of Consuming Fruits and Vegetables

Obesity influences many adolescents, and a potential setting that can help with this health concern is schools. Schools can help raise awareness of adolescent obesity and promote healthier eating habits among adolescents. Therefore, researchers must determine if school food programs influence high school adolescents' behavior regarding the consumption of fruits and vegetables. The study involved a qualitative multiunit case study with a convenience sample of 23 high school students in Grades 10-12 attending schools in the Allentown and Bethlehem areas of Pennsylvania (11 students from Allentown and 12 from Bethlehem). When studying the influence of school food programs on high school adolescents' consumption of fruits and vegetables, there was an assumption that the food schools served affected high school adolescents' food choices. Results showed a slight indication that school food programs had some influence on high school adolescents' behavior in consuming fruits and vegetables, but some improvements were needed to increase their choice of the fruits and vegetables provided. The results and recommendations of the study provide physicians and educators with additional information about adolescent fruit and vegetable consumption, how schools influence these behaviors, and whether the food adolescents consume at schools promotes better health and eating habits.
