Perceptions of Food Insecurity among College Students: Assessing a Growing Challenge on College Campuses
Teresa Henson
ProQuest LLC, Ph.D. Dissertation, University of Central Arkansas
Food insecurity, the lack of sufficient and affordable food, is a concern for communities everywhere, especially colleges and universities. Due to the lack of access to food on college and university campuses, students struggle to meet their basic needs. Evidence suggests that the lack of food can undermine students' educational achievement. However, more data needs to address the perceptions of food insecurity among college students in the south-central United States. This study explored the knowledge of food insecurity, coping with it, assistance with it, and the role of administrators from the perspective of college students in the south-central United States. Seven students from local universities in the south-central United States participated in the study. Findings indicate that the students were aware of food insecurity, but there was specific need to increase that awareness for all students on campus. Other results show that the students had someone important to confide in if they needed help with food insecurity or resources. Findings reveal the need for more resources and attention from college and university administrators regarding food insecurity to meet students' basic needs.
