Restaurant/Institutional Food Service. Supplementary Units.

These five units provide supplementary materials for special needs students who are enrolled in regular food service courses in Missouri. The special needs units are designed to facilitate the mainstreaming of students with a wide variety of handicapping and disadvantaged conditions. The units are self-paced and contain simplified line drawings, controlled text, vocabulary development, and mathematics practice exercises. Each unit consists of the following: introduction, objectives, and student assessment; terms and equipment; steps of procedure; skill sheets; activity sheets; and a unit review and performance checklist. Instructor's information includes notes, bibliography, resources--including computer software, and answer keys for skill and activity sheets and unit reviews. The units cover the following material: (1) human relations; (2) sanitation; (3) safety; (4) using basic mathematics skills; and (5) preparing foods and interpreting recipes. (KC)
