A Comprehensive Experiment for Training Undergraduates Majoring in Nutrition Education Using a Paper-Based Micro Acid-Base Titration

We introduced a microfluidic paper-based analytical device ([mu]PAD) to undergraduates majoring in nutrition education using a modified acid-base titration on paper microzones. After designing experiments for sample analysis using micro acid-base titration, students fabricated the devices and implement the experiment as designed. Then they designed and implemented a classical titration method to evaluate the analytical results obtained by micro acid-base titration. Finally, the students completed an instructional design for teaching at secondary or higher vocational colleges. This comprehensive experiment aims to expose students to [mu]PADs, ignite their passion in learning courses related to food analysis or chemistry, train their capabilities in designing an experiment, improve skills in instructional design, and facilitate education of [mu]PADs in secondary or higher vocational colleges. Fifty-three students majoring in nutrition education participated in this comprehensive experiment and completed instructional designs within 2 weeks (14 h) in the fifth semester. Positive feedback from students indicated that the learning objectives of this comprehensive experiment were met.
