This resource manual contains criteria, prototype policies, procedure, and forms for establishing a comprehensive sanitation and safety program in Wisconsin public schools. The introduction contains a mission statement and a description of responsibilities for various state employees. The section on policy and procedure development outlines standards for personnel; handwashing; food purchasing and storage; food handling, servicing, and transporting practices; the hazard analysis critical control point; cleaning and sanitizing procedures; solid waste management; equipment prevention maintenance; suspected food-borne illness policy; injuries and accidents; and a plan for fire emergencies. Other sections detail procedures for staff development and training and the safety inspection process. Appendices contain a list of resources and information on Wisconsin's Right to Know Law.
